Popular new dishes that are designed to transport diners from the bustling streets of New York City to the cobblestone laneways and turquoise seas of St. Tropez include their new Tagliatelle aux Fruits de Mer, an upscale pasta dish with a plant-based ‘seafood’ melange that boasts delicate flavors and authentic Mediterranean olive oil.

Also new is their plant-based Crabe Pané aux Choux de Bruxelles, which features vegan ‘crab’ cakes served with lightly grilled Brussels sprouts and a light yet flavorful tartar sauce, and their Coquilles St Jacques, with pan-seared seaweed scallops served on a bed of sauteed spinach.

Delice & Sarrasin has also reimagined the classic French Salade Nicoise, recreating its tuna and egg in-house using artisan ingredients and complementing these savory flavors with arugula, tomatoes, cucumbers, fava beans, peppers, olives, and more.

As a recent review in the New York Times said, where well-known food critic David Kortava reviewed some of the vegan bistro’s new plant-based seafood selection, “One metric for assaying the quality of a vegan dish that features imitation meat or dairy is the extent to which it approximates the sensory attributes—the mouthfeel—of the real thing. By this standard, the crab cakes at Delice & Sarrasin, presented with a savory cashew-based tartar sauce, are beyond reproach. My father, a longtime pescatarian, tried them and wove a theory that the kitchen is serving actual crab to unsuspecting herbivores. ‘This is crab cake,’ he kept saying, indiscreetly.”
